I’m in the mood for chili-rodeo is coming up-so I’ll think how to make this diet/low carb friendly. I’ll ditch the beans, and maybe add a cup or two of chopped mushrooms and maybe add some hominy. Adding some lentils *soak overnight first* will make it protein packed. Ok—it won’t really be chili but a chili stew. Yes, in Texas, there is a difference between the two. Love New Mexican and Ancho chiles. Try different kinds.
