These make a portable snack/breakfast and can be frozen. We are cutting back on dairy/cheese around here so I may whip in a little goat cheese rather than the shredded stuff used here. Pretty versatile so I may add mushrooms or shallots. Eggs are cheap so I might just make two dozen.
