Used this very good recipe. Only changes are—use one egg, add cilantro and lime juice for the crab cakes. Also added cilantro in place of parsley in the remoulade sauce (courtesy of Emeril).

I love Ancho chile, like my FAVE, (along with New Mexican chiles) but something about sweetness on chicken wings (to me) takes away the flavor/juiciness. The “mouth feel” immediately tastes the sweetness. Then the juiciness and skin are left last. I actually made this monster one time with the aid of my dear friend Peg(o’my heart). It was huge and it was good. Every area in Italy has their own take on this dish and ours was the Friendswood/Pearland edition. Meatballs, chopped eggs, grilled chicken breasts and thighs, eggplant, pasta, homemade marinara, layers of veggies etc and baked in a huge bowl. Serious, exhausting good food.

Seems to be a minor argument in cooking community if this is an “Italian thing” or an “Old South Favorite”. In our house it usually means that its someone’s birthday. It is a favorite in our house. Flavorful and easy. I use pork loin, but any sirloin roast or butt or shoulder (?) can be used.
